Hake with Sweet Chili & Stir-Fry Veg
Ingredients:
• 1 hake portion (160 g)
• 1 tbsp sweet chili sauce
• 1 handful mixed stir-fry vegetables (peppers, carrot, onion)
• 1 tsp oil
• 1 tsp lemon or lime juice
• Salt and pepper
Method:

Heat oil in a pan.

Add stir-fry veg and cook 2–3 minutes.

Add hake and cook 3–4 minutes each side.

Add sweet chili sauce and lemon.
-
Toss the veg in the sauce and serve.
Two Simple Recipes
Hake with Coconut & Lime
Ingredients:
• 1 hake portion (160 g)
• 120 ml coconut milk
• Zest and juice of half a lime
• 1 tsp curry powder or turmeric
• Fresh coriander
• Salt and pepper
Method:

Mix coconut milk, lime juice, zest and curry powder.

Pour into a small baking dish and add hake.

Bake at 180°C for 15–18 minutes.

Top with coriander before serving.
Mediterranean Hake Traybake
Ingredients:
• 1 hake portion (160 g)
• 1 handful cherry tomatoes
• 1 handful sliced courgette
• 1 handful olives
• 1 tbsp olive oil
• 1 tsp lemon juice
• Salt, pepper, oregano
Method:

Heat oven to 190°C.

Add tomatoes, courgette and olives to a baking tray.

Place hake on top.
-
Add oil, lemon, salt, pepper and oregano.

Bake 18 minutes until flaky and colourful.
