Scallops with Chorizo
Rich, smoky and full of flavour with minimal effort.
Ingredients (serves 2):
Fresh scallops, chorizo, garlic, olive oil, parsley
Cooking Instructions:

Fry chorizo until it releases its oils

Remove chorizo and keep the oil in the pan
-
Sear scallops in the chorizo oil for 1½–2 minutes per side
-
Add garlic for the final 20 seconds
-
Return chorizo and sprinkle with parsley
Serve with salad, rice or pasta.

Golden Garlic Butter Scallops
A simple classic. Quick, rich, and full of flavour.
Ingredients (serves 2):
Fresh scallops, butter, garlic, lemon, parsley
Cooking Instructions:

Remove scallops from the fridge 10 minutes before cooking

Pat completely dry with kitchen paper

Heat a pan until hot and add a little oil

Season scallops just before cooking
-
Cook for 1½–2 minutes per side until golden

Add butter and garlic for the final 30 seconds
-
Finish with lemon juice and parsley
Serve immediately.
Scallops with Bacon & Peas
Salty, sweet and comforting. A proper crowd-pleaser.
Ingredients (serves 2):
Fresh scallops, smoked bacon, peas, butter, black pepper
Cooking Instructions:

Fry bacon until crispy, remove from the pan

In the same pan, sear scallops for 1½–2 minutes per side

Add peas and butter and heat through
-
Return bacon to the pan and season with black pepper
Ideal as a starter or light main.

Always check before cooking and serving. Keep refrigerated and use within the recommended time frame for best quality.

• Once opened or removed from the shell, use within 24 hours
Freezer:
• Wrap tightly or store in an airtight container
• Freeze for up to 3 months
• Defrost in the fridge overnight
• Once defrosted (thawed), remove from shell before cooking
• Do not refreeze
