Lemon Butter Haddock (10 Minutes)
Ingredients:
• 2 haddock fillets
• 1 tbsp butter
• Juice of half a lemon
• Salt and pepper
• Fresh parsley (optional)
Method:

Melt butter in a pan on medium heat.

Add haddock and cook 3–4 minutes on each side.

Add lemon juice and a little salt and pepper.

Finish with parsley if using.

Oven-Baked Herb Haddock
Ingredients:
• 2 haddock fillets
• 1 tbsp olive oil
• Juice of half a lemon
• 1 tsp mixed herbs
• Salt and pepper
Method:

Heat oven to 190°C.

Place haddock on a baking tray.

Drizzle with oil and lemon.

Add herbs, salt and pepper.

Bake 12–15 minutes.
Haddock in Creamy White Wine Sauce
Ingredients:
• 2 haddock fillets
• 1 tbsp butter
• 1 small shallot (or 1/4 onion), finely chopped
• 50 ml white wine
• 100 ml cream or crème fraîche
• 1 tsp lemon juice
• Fresh parsley
• Salt and pepper
Method:

Melt butter in a pan and cook shallot until soft.

Add white wine and simmer 1 minute.

Stir in cream and lemon juice.

Add haddock, cover and cook 6–8 minutes on low heat.

Season and top with fresh parsley.
