Creamy Mixed Fish Pan Fry
Ingredients:
• 500g mixed fish pack
• 1 tbsp butter or oil
• 1 small onion, diced
• 2 cloves garlic, crushed
• 150ml cream or crème fraîche
• 1 tbsp lemon juice
• Handful of spinach (optional)
• Salt & pepper
• Fresh parsley
Method:

Heat a pan on medium and add butter or oil.

Cook onion and garlic until soft.

Add the mixed fish and cook for 4–5 minutes.

Pour in cream and lemon juice, simmer 3 minutes.

Add spinach if using.
-
Season well and finish with parsley.
Perfect with rice, mash or pasta.
Two Simple Recipes
Mixed Fish Curry (Quick & Simple)
Ingredients:
• 500g mixed fish (your pack)
• 1 tbsp oil
• 1 onion, chopped
• 2 cloves garlic, crushed
• 2 tbsp curry paste
• 200 ml coconut milk
• 100 ml water (optional)
• Fresh coriander
• Salt & pepper
Method:

Heat oil in a pan. Add onion and garlic, cook until soft.

Stir in curry paste and cook 1 minute.
-
Add coconut milk and water if needed. Simmer 2 minutes.

Add the mixed fish and cook 6–8 minutes until flaky.

Season and finish with coriander.
Creamy Lemon & Herb Traybake
Ingredients:
• 500g mixed fish (your pack)
• 1 tbsp olive oil or butter
• 1 lemon (zest and juice)
• 1 tsp Dijon mustard
• 150 ml double cream or creme fraiche
• 1 tsp dried herbs or fresh parsley/dill
• Optional: spinach or cherry tomatoes
• Salt & pepper
Method:

Heat oven to 190°C.

Place the mixed fish in a baking dish.

Mix cream, lemon juice, zest, mustard, herbs, salt and pepper.

Pour the sauce over the fish.
-
Add spinach or tomatoes if using.
-
Bake 18–22 minutes until cooked and bubbling.

Add fresh herbs before serving.
